- Spiralize 4-5 large carrots. (At this point we like to slightly blanch our carrots; this helps with
being able to digest them better and receive the nutrients more readily in the body as
oppose to eating them raw) - To blanch; fill a pan with a little water (as if you are going to steam something), and when
the water almost comes to a boil dip the carrots into the water for a couple seconds and
remove - In a blender mix up the tahini dressing
- Toss the carrots and dressing together
- Enjoy! (You can sprinkle some toasted seeds on top as a garnish if you like!)
Sweet Tahini Dressing
1/2 cup raw sesame tahini
1/2 cup lemon juice
1/4 cup honey
1/2-1 tsp salt
